3.6 Sampling
Food and Health & Safety
The Food and Safety Team’s Food Sampling Policy, including arrangements for the
analysis and/or examination of the samples, is set out in appendix 9.
In 2025/26 we will continue to take samples of water and shell昀椀sh for classi昀椀cation and
algal toxin monitoring purposes.
We also plan to take 80 samples of ready-to-eat food in accordance with our sampling
policy, which is detailed in appendix 9. Microbiological analysis of the samples will be for:

Aerobic colony count
•
E. coli
•
Listeria species
•
Enterobacteriaceae
•
Coagulase-positive Staphylococci
•
Salmonella species.
Water samples may be taken when investigating outbreaks of Legionnaires’ Disease.
In 2024/25 the Food and Safety Team participated in three of the UK Health Security
Agency’s Food, Water and Environmental Microbiology Services (FWEMS) testing
laboratory co-ordinated sampling studies:
1.
Study 80 - Unpasteurised and pasteurised milk cheeses (UK and non-UK) to
ascertain microbiological safety.
2.
Study 81 – Hygiene in Tattoo and Cosmetic Piercing Premises.
3.
Study 82 – Raw Shell Eggs (non-lion brand) to ascertain microbiological safety.
Unsatisfactory results are followed up in accordance with associated criteria to ensure
the risk to public health is protected.
The Food and Safety Team plan to participate, in 2025/26, in three further sampling
studies co-ordinated by UKHSA - FWEMS testing laboratory. These include:

Study 83 Ready-to-Eat Dried Fruit, Nuts and Seeds to determine microbiological
safety and quality.
Study 84 root vegetables to determine microbiological safety.
Study 85 will be con昀椀rmed in due course in response to ongoing public health
issues during the year.
